At the end of the rambla del Raval, at the bottom of a thick set of stairs, you can find a world in which traditional culinary roles are reversed. Quim Coll, Toni Romero and Javier Cotorruelo have formed an entire culinary concept surrounding products commonly used as side dishes: vegetables. At 4Amb5 Mujades, you will not find chewable animal protein in any of your meals. Instead it will come in the form of oils, sauces or gelatins.
4Amb5 Mujades is dedicated to the essence of agriculture. “Mujades” is a unit used to measure land and the restaurant name stems from the historical process of municipalities granting farm land to their subjects.
Essential menu items include entrecôte cabbage with meat juice; falsos callos made from the sparassis crispa mushroom with chickpeas and pine nuts; sweet potato Majorcan sausage; and a corn custard made without milk or eggs.
We have no doubt you will want to return time and again to this magical corner garden.
