“You are what you eat.”
With this philosophy in mind, Evgenia Arambatzi, Christiane Sculze and Dimitris Koutsomerkos built Armonía, a small restaurant at the crossroads of Valencia and Balmes, in the heart of Barcelona.
They offer raw and vegan interpretations of their favorite ancient Greek dishes. Dimitris explains that ancient Grecians ate many vegetables and rarely consumed gluten. They replaced the ingredient with another grain, “zea.” Many believe a diet with more vegetables and less gluten will improve their health and overall wellbeing.
At Armonía, they don’t aim to exclude any customers and they respect the many ways to live a healthy lifestyle. They have gluten-free and dairy-free options as well as two cheese dishes. They buy ingredients fresh from farmers between two and three times a week.
