Bar Veraz came to Barcelona with a strong footing and a very clear commitment to Mediterranean cuisine. Located within Hotel Edition, it promises quality as luxurious as the fame that precedes this hotel chain.
The name of this restaurant, which means truth, is the basis of this kitchen; honest, focused on the seasonal product, with beautifully presented dishes. Despite its prestige, its atmosphere is relaxed and informal. In front of Bar Veraz we find the chef Sebastián Mazzola and the sommelier Sussie Villarico; nothing gives us more pleasure than to be accompanied and advised by these experts. In their hands, every guest is well cared for and fed. It offers a gastronomic journey around the most representative dishes of the Mediterranean coast. We started with a warm cod brandade with green beans and bay powder. We continue with veal fricandó cooked at low temperature, rovellons, pine nuts and crusty bread. These are light dishes, but they are strong in flavor and remind us of the kitchen of our grandmothers.
The intention of Sebastián Mazzola is to surprise both locals and foreigners, so in the menu we find classic flavors inside of totally new recipes. We have the Risoni of the Catalan coast with prawns, asparagus and dill. A paella where pasta replaces rice. Sacrilege, you may ask? Not at all – the flavor is intensified. A different and delicious way to enjoy the traditional paella, and it is much more tasty!
At the time of dessert, there is nothing better than saying goodbye than with this particular tribute to autumn in Catalonia; liquorice ice cream with sweet potato, chestnut, sweet potato skin and pumpkin seeds. A true work of gastronomic art, satisfying to see and even more satisfying to taste. Chocolate lovers will not be able to leave without trying the 70% cocoa chocolate souffle with tonka bean ice cream, accompanied by a sweet wine recommended by Sussie Villarico. What a pleasure!
