If you were to look up the top ten Tortillas de patata (Spanish quiche) in Spain, you would always find the tortilla of Doña Concepcion Marfil, which she serves in her Taberna de Ardosa in Madrid. Normally if you want to get a chance to try this tortilla you have to get there before noon, even though there have been a few lucky ones who were able to get it as an afternoon snack. The reason being is that they if they met the demand for this iconic Spanish dish, they wouldn’t be able to prepare some of their other iconic dishes such as: cecina de Leon (beef Lyon style), salmorejo Cordobes (a cold vegetable and egg soup), croquetas de gambas (shrimp croquettes) or the “combo de vividor” which includes anchovies and Vermouth. Like any great tavern they offer a wide range of beers on tap like Bombardier, Guinness or Pilsner Urquell.
