Juan Latuff and Alejandro Bringas met in the kitchen at Rojo y Negro and when they discovered how well they worked together and shared their culinary ideas, they decided to open their own business: Chivuo’s. Here they serve delicious, well-made sandwiches.
Chivuo means “bearded” in Venezuela (where they’re both from) and it was an easy name for them to decide on, considering their respective facial hair. Another quick decision was to make their own sauces and to treat each of their sandwiches as if they are haute cuisine: “We are tired of being in places that are constantly searching for and dreaming of Michelin stars. We wanted to make a good sandwich for the people.”
There are five sandwiches to choose from: The Burger – beef, onion confit, crunchy bacon and provolone; Tuna Melt – fresh tuna salad with homemade mayo and melted cheddar cheese; Grilled Chicken Sandwich – juicy grilled chicken with fresh tomato, onion, aioli and avocado; Philly Cheese Steak – slices of beef with onion, melted provolone and homemade herb aioli (there’s also a vegetarian version); and the magnificent Pulled Pork – slow cooked pork in a homemade barbecue sauce with coleslaw. Everything can be accompanied by french fries, bravas or their own Chivuo’s version with crunchy bacon and melted cheddar cheese on top.
Everything goes better with craft beer, and every week they have five different barrels on tap and offer sample sizes so you can test a few out before choosing one.
To finish they have an amazing cheese cake, apple crumble and chocolate cake. As they say, “a tribute to every day, to the working class hero. We wake up every day with the idea of making an honest product that should be treated with the respect it deserves.”
If you’re in Gracia and want to feel a little happier, stop in for a simple sandwich.
