Passion, work, delicacy, precision and a perfect union between Alba, Nuria, and Mercè make up the soul of the bakery Galette & Pastim.
The smell of fresh bread and baking pastries greets you as you enter this honest and minimalist establishment located in the Horta neighborhood. Through the windows you can see the bakers working and you can get a sense for the love they put into their work. In an effort to return to basics, Galette & Pastim uses only the best raw materials.
Mercè is in charge of baking the bread every day. She takes into account the time needed to ferment the bread and the time necessary for proper kneading. Her focus is on the flour and she does not include any additives in her recipes. The result of this patience and care? Excellent bread. Mercè explains, “Even though you do it every day, when you see the bread come out of the oven you get excited. And, if you do not do it well, you get frustrated.”
Bread is not the only attraction at Galette & Pastim. They also offer an array of croissants, cookies, cakes, jams and juices. These sweet treats are the responsibility of Alba and Nuria. In pasty school, Alba learned that the pastries she was used to were not as delicious as they could be. She used what she had learned to reexamine raw ingredients and discover the proper ways to use them. This patient exploration is not something that can be taught but requires a true love of baking. Nuria shares this love and has a particular passion for creating the perfect panettone.
Mercè, Alba, and Nuria show us what can happen when passionate people see the beauty in quality ingredients. Their love for their work consistently results in culinary perfection.
