After opening SOMA, a restaurant with a tasting menu consisting of 11 levels for 16 diners, Luke Jang has decided to continue expanding his project. This time with a bar at the top of the restaurant where he created Las tapas de SOMA.
Close, always smiling, fun and always taking care of each diner – This is Luke. This Korean chef loves to explain each of his dishes and the experience and history behind each creation.
Soma tapas is the opportunity to get to know your kitchen more closely, in an informal way and at a more affordable price. Their dishes are designed to bring us closer to Korean cuisine, and specifically, the streets of Korea. Proposals that he has created to convey the soul of Korea but merged with the culture of Madrid and with techniques that he has been learning throughout his career.
Its menu consists of twelve proposals with six dishes designed as an entrée, five as main dishes and a dessert.
In The Tapas of SOMA, Luke has reinvented classic tapas from Madrid. Elaborations like the Korean gilda, with bluefin tuna, sesame, piparra, shitake, pickled lotus and kimchi is a clear example. The Ssam of Iberian bacon, which cooks for 36 hours on a dragon leaf and is eaten as a taco, or the Okonomiyaki to the Korean, a tortilla of red tuna, egg and live Katsuobusi are other surprising dishes. These are just some of the examples of the gastronomic proposals that you will find in the menu.
Seeing Luke work at the bar is another attraction in this area. The product, the technique and the creativity come together in SOMA, creating a unique gastronomic experience.
