Sometimes, a restaurant identifies so much with a neighborhood, that it seems that it couldn’t be anywhere else. An example of this is the restaurant Living Vigo in “Las Traviesas (The Sleepers)” since 2008. Living is a restaurant with a very modern concept, eclectic style, and a mix of trends with the coolest and at the same time classic air, which completely integrates in a neighborhood like “Las Traviesas”, one of the most dynamic and alive neighborhoods in the city. The restaurant is a reflection of the trajectory of the creators, Yolanda Díez and Carlos Gea, two young chefs belonging to a generation of cooks who have rescued us from the usual, and yet, as the song says, respectful of the origins and roots of traditional cuisine, in this case with devotion to Galician cuisine.
The name of the restaurant is very good, because what is perceived the most is the energy it transmits: the hustle, which is the mirror of the daily life of a city that both has fun and works. The kitchen is also alive, being a continuous proposal with a balance between the good Atlantic products from markets in Puerto de Mar, with a very elaborate cooking style that fuses raw materials and culinary tendencies both national and international; without abusing anything and without missing any contribution that would go well with the product being used. The cooking is varied, with different styles, sometimes giving a fresh air to the traditional Galician dishes, and other times approaching the dishes with a more creative technique, with a touch of Mediterranean cuisine or playing with any suit of international gastronomy.
The menu is constantly evolving and is renewed according to the seasons. Every day there are a minimum of four suggestions that depend on the fish at the market or the meats and vegetables in the marketplace. The format is flexible, the way tapas coexist and are to be shared at the center of the table, with individual dishes or a combination of both. All the creations presented by Yolanda, a chef that is at the height of clairvoyance, when explaining the options.
After a welcomed appetizer, the good ideas start with the bluefin tuna tartar with avocado and watermelon, a wise choice for the tuna category with which they work with mounted knives with Sabayon Laurel and Iberian. Almost always the knives belong to Aldán, one of the best in Galicia, or the indispensable Cambados octopus with paprika and wakame seaweed, a fusion between Galician cuisine and an Asian touch.
The continue, there is always a variety of meats and fish, delicate dishes that are forceful at the same time, like the manta of veal cheeks with teriyaki and ginger or the celebrated sweet rice with Redondela choco and artichokes.
It’s highly recommended to leave ample space for desserts, which are another house specialty with the best presentations.
All of this is enjoyed at Living Vigo in a place of unrepeatable appearance, a gift for lovers of interior, with timeless tables and chairs, in all colors, with natural light and artificial love thanks to the lamps that adorn the ceiling, auxiliary furniture that cools the atmosphere and amuses the view. Living is the complete experience in the new Vigo where you eat.
