Traditionally in Nordic countries the family names come from the proper name of the mother or father – this is how Olofson was born. The chef, jokingly called “the son of Olof” has always wanted to create a Swedish smokehouse and bar with craft beers. Chef Olof turned a fermentor into a smoker, and began experimenting with temperatures, times and different woods – each combination brings different flavors to each dish.
Chef Olof, inspired by the traditions of his home country of Sweden, created a menu based on cold smoked dishes and hot smoked dishes. In each dish he looks for that memory he has had since he tasted the first smoked dish of his life – which contained the perfect balance between sweet, salty and a beautiful smokey aroma.
In Olofson, not only do they dedicate themselves to the Swedish smokehouse , they also place a lot of importance on craft beer, and have 12 shooters with very interesting and different references, which are always rotating. Alberto is the one in charge of the insatiable search for craft beers. His passion for craft invades him and it is easy to notice after viewing the beer menu – flavors range from fruity, intense, bitter and smoked.
Each product goes through a process of marinating, drying and finally is smoked, a process that creates impressive flavors. The menu surprises, wih dishes like corn on the cob with smoked butter and espelette to the Paris mushroom stuffed with mozzarella, smoked for 10 hours cold with alder wood. The pastrami sandwich is marinated for 6 days and smoked for 9 hours in apple wood, accompanied by mustard, pickles and tartar sauce.
All the hot and cold dishes are accompanied by a traditional gravlax sauce, potato salad and pickles, all made at home. The cold smoked salmon smokes for 15 hours on cold , while the hot one is smoked for 1 hour on cold and 2 hours on hot, this process creates the perfect balance of aroma and flavor. The desserts are not forgotten by the smoker, as the Brie cheese is hot smoked for 2 hours with apple wood, providing very subtle flavors.
Olofson is a space with airs of street food where you have to order directly in the kitchen and everything is served in metal trays. Where informality and good service come together and create the perfect environment to share and enjoy good beers and special dishes.
