Ten years ago, Frederic fell in love with a space in the heart of Barcelona and reached out to his friend Nacho, a dentist with a passion for wine, in hopes of building something together.
Their gastronomic adventure, Osmosis, began with a unique twist: there would be no set menus. From the beginning, they decided to be a kitchen dependent on the seasons. As new products in the local markets evolve, Osmosis adapts their menu, creating a new one every two weeks. They manage to maintain their reasonable prices and some classic dishes while also incorporating whatever is new and fresh. They currently have three menus depending on the tastes of the diner and the time they have allotted for their meal.
Osmosis offers a 25 euro menu Monday through Friday that includes an appetizer, first course, main course and dessert. In the fall, dishes include warm cannelloni, suckling pig with pineapple chutney, or desserts like coffee ice cream and chocolates with spices and nuts. Due to their constant evolution, customers can return to Osmosis monthly and receive entirely different meals. Over the course of its life, the restaurant has seen more than two thousand different dishes.
