Chef and owner of Ramen Kuma, Koji Tanaka, had always worked as a “salary man”. Until one day he was moved by his culinary passion and decided to leave his job to open Izakaya Tora, in the Ruzafa neighborhood. But today, we’re talking about his other successful restaurant endeavor, Ramen Kuma.
In the barrio of Ruzafa, Ramen Kuma brings us the most popular dishes in Japanese cuisine. With a menu full of traditional and authentic ramen, everything is homemade. From the bases that make up the ramen miso and soy, to the broth, everything is prepared with products from the market Ruzafa. These ingredients are so fresh, they are bought each day.
With all these fresh ingredients comes a menu that is extremely specialized. There are only two main dishes to choose from, ramen miso or ramen soybean. In addition to these two staples, the chefs prepare a daily Japanese curry suitable for vegans.
Following its philosophy of everything done at home, Koji has brought from Nippon, a traditional noodle-making machine and to craft all of his ramen. Though it requires increased labor for him and his team, the extra work is well worth it.
The interior is simply decorated in pure Japanese style with a touch of fun. Whether you are going to dinner, stopping by for a few drinks or want to end the day with an authentic bowl of ramen, you can stop by Ramen Kuma and you will be welcome.
