How long has it been since you’ve seen a new deli in the center of Barcelona? A long time, right? In fact, you probably buy the tea of breasts or sausage in the supermarket. So what’s a new deli doing in Parlament, one of Barcelona’s fashionable streets?
The first thing that invites you to enter the Rooftop Smokehouse Charcuterie is the design of the façade: old school typography signs and two original sideboards designed by Carla, the owner of the establishment. Another surprising element for those not familiar with Rooftop Smokehouse is its name: there is no roof or chimney. It all started when Carla and Buster – patterns in life and business – began organizing dinners with their colleagues on the rooftop of their home. Hence the ‘rooftop‘. And the ‘smokehouse‘? The differential element in these remains consistent products cooked at home, on the same terrace, through a rustic but complex traditional smoking system. They put the dinners at home with friends on the menu they offer under reservation in their homonymous establishment, and from the smoke on the terrace they went on to expand their products in the impressive 25 meter chimney of Lehmann, an old doll factory located in a courtyard in Example Esquerra.
That said, we crossed the threshold of the door to find what appears to be, indeed, a deli, retro refrigerators included. The great – and we could say unique – difference is in the product. Here they sell smoked meats and fish themselves and homemade pickles, accompanied by other carefully selected complementary foods. Here you can buy their famous pastrami, chicken breasts, mackerel, octopus, salmon, or a real English bacon unlike any bacon you’re used to. All of it, of course, smoked. Even the butter. Between the pickles are gherkins, beets, kimchi, sauerkraut and eggs in brine. The result of both processes, smoked and pickled, is combined perfectly in preparations such as the exquisite mackerel pate or salmon rillette.
The raw material for the expansion of their products comes from a studied selection of small suppliers, looking for both quality and proximity. To find them, Carla and Buster usually perform what they call ‘Monday I+D’, expeditions to the place of origin of the food to find new ingredients and learn about new processes. But the knowledge does not stay at home; Rooftop Smokehouse regularly teaches workshops so that anyone can prepare their own smoked meat and pickles at home. And if you have an event and prefer it to be prepared for you, they offer a catering service that will definitely leave a lasting impression on your guests.
