Revolutionize the world without gluten. This is the motto of Sana Locura, a bakery where gluten is not welcome. This cafe is the paradise of Celiacs, who, once inside, can relax and order what they want the most from their showcases and shelves. Everything here is apt for them. Behind this project is María Ángeles, Fermín and Manuel, a family that decided to open this space after diagnosing the godson of Fermín with celiac’s disease. His diet had to change and they discovered the difficulties he had finding products suitable for him in different establishments. A change in their professional lives, a project that reexamined the market opportunities were reasons to open up Sana Locura, a cafe that is now a dream turned reality.
At the forefront of the cafe is Víctor Manuel Villajos, a pastry mater who has decided to specialize in the gluten-free world and cope with the difficulties he meets every day. As Víctor says, the first problem is the lack of specialization in this world, because there are no professionals in this field. In addition, working with these masses is completely different: “Having kneading experience is important, but this type of dough is much more liquidy and the fermentation processes are completely different.”
The bread is the star product of Sana Locura. In this cafe you will find up to 15 different kinds of loaves: baguettes, toast, German bread or buns are some of the options you will find every day. All the breads are developed in the cafe, following an artisan process of long fermentation (between 24 and 48 hours). Among all their breads, we must highlight the beauty bread, a bread containing chia, hemp, corn and olive oil and of which they are very proud, since it contains the 60% of fatty acids that an adult needs each day.
In addition to bread, in its showcases you will find sweet and salty products, all made by them. Their salty offer is more limited since they only have an oven, and not a kitchen; but madness comes in the sweet part. Palms, donuts or croissants are part of the pastries; tarts such as lemon pie, black forest or San Marcos in the pastry part. Its showcase is so colorful that anyone who enters Sana Locura will begin to salivate.
To accompany these products they have specialty coffee and special teas. As Fermín says, “We wanted to serve a good cup of coffee, a quality coffee with fresh milk that was as good as the rest of the products we offer.”
