In this small Italian restaurant located in the Barrio de las Letras no matter who you are, once inside Symphony Rossini you are part of the family and in Italy, where the family eats, is a spectacle in every way.
Gianni Pinto and Alberto Ricci, chef and maitre d’ respectively, love their jobs and it shows. Alberto’s smile greets you at the door, and if you’re a regular, your favorite wine already will be served before the aroma of basil, Parmigiano Reggiano and pomodoro have reached your nostrils. Gianni’s Italian cuisine is simple and generous, but also art. Taking tradition, affection, patience and respect and combining it with the highest quality products. But the experience of the chef at Michelin-starred restaurants in Milan allows him to take traditional recipes and give them a spin, such as dressing their burrata di Corato with carrot and hazelnut pesto, artichokes, dressed with oil and lemon peel.
A special mention goes to their pastas, being so delicious and abundant, such as the impressive “Alla Tarantina” of “linguine” made from Gragnano wheat, with garlic sauce, stewed onions, olive oil, fresh garlic and sepia. How does that sound?
We also find interesting seconds, recipes with few ingredients, where the product is the star, like beef tartare with mayonnaise or gravy with poached egg and black truffle with Assiago cheese cream. But the menu changes daily. Today we were surprised with Ossobuco, tomorrow with mackerel ceviche, or the next day a cold zucchini foam with tomato confit vinaigrette and red fruit … His imagination and his endless desire to please is reflected in his wonderful variety of cuisine. On the other hand Alberto explains about their world of wines, cheeses and Italian liqueurs.
