Without a doubt, this is one of those Japanese restaurants that can be found on the list of favourites of any Japanese food lover. Now, their family is expanding and the latest addition is the NH Eurobuilding. On one side there’s DiverXO by David Múñoz (Madrid’s gastronomic temple) and on the other side there’s the cocktail bar Domo by Diego Cabrera. Fusion represents this ambitious new project, and fusion is what you’ll find on every plate. The two chefs behind this place share the work – David Arauz runs the cold kitchen, the house sushiman who can always be seen behind the sushi bar, and Roberto Lima is found behind the stove working in the hot kitchen. When you come to Sushi 99 you better bring an open mind and receptive taste buds. What you’re about to eat are Japanese dishes mixed with a touch of Mediterranean that go beyond any comfort zone. Innovation and creativity are what strike you upon opening the menu: gyoza made with chicken or with wild boar and caramelized onions; arzúa cheese and chestnut infusion; white fish sashimi on its spine ikizukuri style, complete with nigiris made with its fried skin and dressed with pine nuts, ginger and Maldon salt; lobster carpaccio with plankton rice and an aromatic salad; kimuchi tuna tartar with pickles in a spicy fermented cabbage sauce, wakame seaweed and straw potatoes.
Sushi 99 is an elegant place where you can try to take yourself seriously, but the party arrives as soon as you take your first bite and are transported around the world. And now that the weather is improving, the answer to everyone’s question – is there a summer terrace where we can eat? – is yes.
